If you read this post , I hope you all know what my motive right.. So , lets start learn how to cook ASAM PEDAS ! ( Dear Puan Marjan, if you read this , I REALLY hope that you can cook for me )
Ingredients:
Choose your own kind of fish that you want,
but its really suit with red snapper and ‘ikan pari’
5 lady fingers, some people call it
okra
1 tomato (cut in your own style)
3-4 sprigs of ‘daun kesum’
Cooking oil
Shrimp paste
Tamarind water
Sugar and salt to taste

Spice Paste:
1 clove garlic
1 stalk of lemon grass
4 shallots
10-15 cleaned dried chillies
The
steps:
Blend the spice paste
ingredient all together until fine.
Heat
oil in medium heat and fry the spice paste until fragrant. Stirring
continuously to prevent the paste form burn.
pour some water and stir with the paste.
Soak the tamarind
pulp in warm water. Squeeze the tamarind pulp constantly to
extract the flavor into the water. Drain the pulp and save the tamarind juice.
Add the tamarind
juice, shrimp paste and 'daun kesum'. Cover and let the ingredients to
boil.
Add the fish, and
taste. If necessary, add salt or sugar. Again, cover and wait till the fish is
cook.
Finally, add tomato and lady
fingers, put the lid again and wait for about 3-4 minute.
And serve while hot with rice.
